Homemade Organic Banana Slice

Most weeks (when I’m not travelling) I love to have homemade banana bread in the fridge ready to grab & go. I love this moist, dense, and irresistibly fluffy banana bread as a snack with a morning coffee or afternoon herbal tea. Whether for breakfast or a cozy snack, this recipe transforms simple ingredients into a scrumptious treat. You can serve with organic butter, coconut oil or nut butter if you like to live a little dangerously!

  • 1/2 cup organic almond meal
  • 1 1/2 cup organic buckwheat flour
  • 1 teaspoon baking powder
  • 1/2 cup chopped walnuts
  • 3 ripe, medium bananas
  • 1/4 cup organic coconut milk
  • 1/4 cup maple syrup
  • 1/4 cup organic peanut butter
  • 2 eggs

Combine the wet ingredients and blend until smooth

Add the dry ingredients to the wet ingredients and stir to combine

Once batter is formed pour into a lined baking tin

Bake for 40 mins at 180 degrees

Serve warm with coconut oil, nuttelex or butter
